Chicken Pot Pie Soup

I love, love, love chicken pot pie!  The only problem is that most pot pies are incredibly high in fat or they are complicated and hard to cook.  Yesterday’s rainy, cold weather left me desiring something warm, creamy, and comforting.  I found a great recipe for chicken pot pie soup.  But after reading the recipe, I decided that I didn’t want to have to buy anything extra and that I could probably come up with my own recipe using items I already had at home.    So I did!  It’s VERY easy and VERY quick.  Let me warn you that I’m like my mama.  I don’t measure anything.  I just guesstimate everything.  My measurements are not exact in any way.

  • 1-2 cans of chicken broth
  • 2 boneless skinless chicken breasts sliced into bite-sized portions (or you can cook whole chicken and have your own stock & meat)
  • 1 medium potato diced
  • 1 bag frozen mixed veggies (or 2 cans of mixed veggies)
  • 1 can Cream of Chicken soup
  • 8-10 frozen biscuits
  • Onion flakes (to taste) or you could use fresh
  • Garlic Powder (to taste) or you could use fresh

First, cut the chicken into bite sized pieces and put them into a stockpot.  Add  1 -2 cans of chicken broth (if you only have 1 can, add water).  Add in diced potatoes.  Dump in the bag of frozen mixed veggies.  Add onion flakes, garlic powder, salt, pepper, whatever spices you like to taste.  Add water to cover.  Bring to a boil and let boil until chicken is tender and veggies are completely cooked.  When the chicken and veggies are ready, add in 1 can of cream of chicken soup for thickening.

While your soup is cooking, bake the biscuits according to the package directions.

When the soup and biscuits are done (about 20 minutes each), bchicken pot pie soupreak biscuits into pieces and line the bottom of your bowl.  Spoon the soup onto the biscuits.  It’s YUMMY!  It was so good Jerrad even took some leftovers to work this morning.  The best part of this soup is how easy it is to just dump everything in and leave it alone.  It would be great left simmering in the crock pot all day too!  You can make it your own by adding your favorite veggies and seasonings.
